Replacing the flax seed with King Arthur Unbleached Bread Flour. A full teaspoon of cinnamon. Only 3/4 cup of water.

Hm, I didn't like the way the batter tasted in the original recipe. The finished muffins came out just fine, though. I thought it might be the flax meal. But now I replaced the flax meal with regular flour and the batter still tastes blah. Kind of metallic. I wonder if the eggs are bad or if it's perhaps the soy meal.

I think it's the soy meal. The eggs are fine. Removing the flax meal makes the muffins stick to the paper. :-P
